Rainbow Pumpkin & Beetroot Oatmeal Bowl
Rainbows always win, and a rainbow swirly breakfast bowl is no exception.
INGREDIENTS
- 1/3 cup rolled oats
- 2 tsp chia seeds
- ¾ cup water or milk of choice
- cinnamon, to taste
- ¼ cup roasted pumpkin puree
- ¼ cup roasted beetroot puree
- 1 kiwi, peeled & sliced
- handful blueberries

METHOD
Combine oats, chia, water or milk and a generous sprinkle of cinnamon in a saucepan. Bring to the boil then remove from heat, set aside for 5 mins. Thin with additional liquid if desired.
Tip porridge into a bowl, dollop on pumpkin and beetroot purees and swirl with a chopstick. Adorn with kiwi slices and blueberries.
