Carrot & Zucchini Muesli Bowl

Grating fresh veg into muesli is a great way to add texture and nutrition. Give it a go, I dare you.

INGREDIENTS

  • ¾ cup toasted muesli or granola
  • handful grated or spiralised zucchini
  • handful grated or spiralised carrot
  • sliced strawberries
  • fresh or frozen blueberries
  • generous dollop coconut cream or yoghurt of choice
  • milk of choice, optional

METHOD

Combine granola, carrot and zucchini. Top with remaining ingredients.

COOK’S NOTES

  • If you’re not a fan of raw zucchini or carrot, blanch it briefly in boiling water then drain well before adding to your granola.
